Pan-fried crayfish with creamy polenta, fennel, and salt-roasted hazelnuts

Interlude:
"Tataki" of venison served with wild mushrooms and freshly grated horseradish

First Main Course:
Baked halibut fillet served with Savoy cabbage, winter carrot, scallop mousse, and a buttered mussel sauce

Second Main Course:
Sirloin steak with a salad of seared Brussels sprouts, elderflower capers, truffle, and red wine jus
